Ingridients
3 tablespoons mayonnaise
Large handful of watercress, plus extra to serve
2 gherkins, roughly chopped grated rind and juice of 1/2 lemon
250g tiger prawns, cooked
salt and black pepper
Put the mayonnaise, watercress, gherkins and lemon rind and juice into a food processer or blender and process until almost smooth. Season to taste with salt and pepper.
Toss the prawns in the dressing to coat and serve with fresh, crusty bread and extra watercess.
If you don't like watercress, then you can put any other vegetable that you like, to make it look brightly good and delicious :)
