Stilton & bacon bruschetta :)

Well hello, haha, well stilton & pancetta brushcetta actually but then pancetta is pork belly, although it is similar to bacon. So i'd prefer if it was replaced with beef bacon.

Serves 2
Preparation time 5 minutes
Cooking time 5 minutes

Ingridients
1 tablespoon olive oil
1 garlic clove, crushed
100g (4oz) bacon beef, cut into small cubes or any small size you want.
250g (8oz) mixed mushrooms, sliced
4 tablespoons double cream
25g (1oz) stilton cheese, crumbled
1 tablespoon chopped parsley
4 slices of ciabatta, toasted

Heat the oil in a frying pan. Add the garlic and beef bacon and fry for 1-2 minutes. Stir in the mushrooms and fry for a further 2-3 minutes until cooked.

Stir in the cream and crumbled stilton and cook for 1 minute to warm through. Add the parsley to the mixture, stir to combine and serve on 2 slices of toasted ciabatta for each person.


Let's say if you guys wanna try this and serve for more than 2 people, than you know what to do with the measurings, either guess or double it :)
